Mom's Potato Soup
IngredientsIngredients
 6 med. popatoes, peeled and dried  3/4 c. milk
 2 Tbsp. butter  1 tsp parsley
 salt and pepper to taste
Directions
Cook potatoes in 3 c. water until tender. Do not drain. Add remaining ingredients.
Mash a little to thicken. Simmer.
 Variation: Mix 1 egg with 1/2-3/4 c. flour to make rival dough (should be moist). Drop
blob into soup. Use potato masher to break into small pieces. Cook untilRivals are tender.






15 Bean Soup
IngredientsIngredients
 1 lb. pkg 15 beans, dried  1-2 large onion, minced
 2-3 carrots, minced  2-3 stalks celery, minced
 4 potatoes, cubed  1-2 ham hocks (I trim off the fat)
 1 bay leaf  salt and pepper to taste
 1-2 cloves garlic or 1/4 tsp dried garlic  2 Tbsp. (beef bouillon)
 2 tsp celery salt  1 tsp galic powder
 1 tsp onion powder  1 c. lean ham, cubed, or julienne
Directions
Cook in crock pot or over medium-low heat until tender. Remove bay leaf. Can add
ham towards the end. I cook ham hock in some water and skim off the fat and then
put the broth into the soup. I then cut off the meat into small pieces removing extra fat.
