Baked Custard
IngredientsIngredients
 Scald 4 c. milk  1/2 c. sugar
 1/4 tsp salt  1 tsp vanilla
 6 well-beaten egg yolks or 4 whole eggs  dash nutmeg
 1 Tbsp cornstarch
Directions
Scald milk, salt, sugar, and cornstarch. Pour over beaten eggs.
Add vanilla. Sprinkle top with nutmeg. Place baking dish in pan
of hot water. Bake at 325 for i hr or until set. Can add 1/4 c. rice
and raisins if desired.








Peach Pie
IngredientsIngredients
 1 1/2 large cans peaches in syrup  <1 c. sugar/TD>
 4 Tbsp flour  2 Tbsp Tapioca
 1 tsp lemon juice  pinch salt
 1/8 t. grated lemon rind (opt)
Directions
Combine ingredients and pour into 9" crust. Then add top
crust. Bake at 450' for 15 min. then bake at 350' for 20-30 min.
Variation: 1 tsp cinnamon in place of lemon juice and rind.






Pumpkin Pie
IngredientsIngredients
 1 c. pumpkin  2/3 c. br. sugar
 1 tsp cinnamon  dash allspice, nutmeg, cloves
 1 egg  2 Tbsp flour
 3/4 tsp salt  2 c. evap. milk
Directions
Combine. Pour inot 9" pie crust. Bake at 450' for 10 min then
350' for 20-30 min. Pumpkin must cook up in center






Rhubarb Pie

 3 c. ch. rhubarb  1 c. sugar
 3 Tbsp flour  pinch salt
Directions
Combine and pour into 9" pie crust. Add top crust. Bake at 450' for
10 min. - then bake at 350' for 20-30 min. (Bubbles in center) Makes 2
